I'm feeling virtuous today, which is quite unusual when I have a visitor!
And what's more, I'm feeling virtuous even though we went (as expected)
to Costa for coffee and tart this morning!
How, I hear you ask, can you still feel virtuous???
I'll tell you how.....
Green smoothy (yes, GREEN) and chia seed pudding!
And the best bit of all is that even though they are both ultra-healthy,
they tasted absolutely gorgeous!!!
Now, that's what I call a result!!
I'm grateful to have someone here (namely my beautiful sister Lindsay)
who has not only heard of these healthy foodstuffs, but actually
knows what to do with them!!
And here, for those of you fearless enough to try it,
is what we did.....
GREEN SMOOTHY
One banana, chopped roughly
about 300ml cold milk
some chopped up nectarine
about half a bag of baby spinach
BLITZ....and enjoy!
CHIA SEED PUDDING
Two level dessertspoons of whole chia seeds
about 50ml coconut milk
MIX WELL FOR A FEW MINUTES
SIT IN THE FRIDGE FOR ABOUT 10MINS
|THEN TOP WITH CHOPPED STRAWBERRIES
Y U M M Y!!
Finish the day with a 45 minute walk, and I'd say we're well
on the way to making up for tomorrow's coffee and cake too!!!
