Banana muffins

Meggie reminds me so much of me when I was young! She's always making something! Be it with paper and scissors, paints and stickers, or, more recently, flour and eggs!

Yes, we were baking again today. Thanks to the great recipe book her class made at school. We are kind of going through it at the moment....shortbread last weekend, and today....banana muffins. And I have to say, there are quite a few yummylicious recipes in the book so....watch this space!

I really quite enjoy baking. You can get some really gorgeous results from, lets face it, not too many ingredients, and not too much fuss.

My mam used to bake a lot. She would spend one morning a week baking, and fill lots of Tupperware boxes. It was meant to last us for the week......it's one of my favourite memories of home. If we ate all the goodies too quickly, she would say "I don't know why I bother baking....all you do is eat it all too quickly!" So, the following week, we would shy away from the home-bakes and all we got was "I don't know why I bother baking....all you do is leave it there to go off!" You can't win! But, thankfully, it didn't stop Mam from baking every week. Thanks Mam! So much nicer than packets of shop-bought biscuits!

And, do you know what...if you visit my mam today you'll more than likely still get home-bakes! D'you know...I think it's time I took a leaf out of her book and baked more! Anyone want to come round for coffee???

So, today I am grateful for the art of baking. For the Mam who inspired me, and the daughter I hope to inspire.
